HEALTHIER SWEET POTATO BROWNIES - flourless eggless and dairy free

Base (Brownie) Mixture: • 3 medium sweet potato (baked whole, skin removed) * 3–4 tbsp cacao powder * 2–4 tbsp date syrup (to taste) * Optional: 1–2 tbsp almond butter for extra richness * Optional: a pinch of salt

Topping (Optional): • A sprinkle of cacao nibs, crushed nuts, or desiccated coconut

METHOD

* Preheat oven to 180°C . * Pierce the sweet potato several times with a fork to help it cook faster. * Bake whole for 40–50 minutes, or until soft when pressed. * Let cool completely, then peel off the skin. * Mash the sweet potato in a bowl until smooth. * Add cacao powder and date syrup, adjusting sweetness and chocolate intensity to taste. * Mix until fully combined into a thick, fudgy mixture (add almond butter if using). * Press mixture into a lined small baking dish to form an even layer. * Add optional toppings. * ⁠Bake in the oven for 20-25 min * Refrigerate for at least 1 hour until firm. * Slice into squares and store in the fridge
