Soft, delicious and naturally sweet, these chickpea cookies are a wholesome treat made without refined sugar or refined flour. They're also a great source of plant-based protein and fibre, thanks to the chickpeas and almond butter.

With just a handful of simple ingredients, they're easy to make and perfect when you're craving something sweet without reaching for highly processed snacks.

Ingredients

  • 1 can chickpeas, drained, rinsed and patted completely dry

  • ¼ cup almond butter

  • ¼ cup maple syrup

  • 1 tsp baking powder

  • ¼ tsp salt

  • ⅓ cup cacao nibs

Method

  1. Preheat the oven to 180°C and line a baking tray with baking paper.

  2. Drain and rinse the chickpeas, then pat them thoroughly dry.

  3. Add the chickpeas, almond butter, maple syrup, baking powder and salt to a food processor or high-speed blender. Blend until smooth and creamy.

  4. Transfer the mixture to a bowl and fold in the cacao nibs.

  5. Scoop the mixture onto the lined baking tray to make 10–12 cookies. Flatten each one slightly with the back of a spoon.

  6. Bake for 15-20 minutes, or until the edges are lightly golden.

  7. Allow to cool for 10 minutes before enjoying.
